HEALTHY SPICY RECIPE : SPINACH GRAVY

 3 CUPS CHOPPED SPINACH -BLANCHED, PUREED

2 TBSP. OIL OR GHEE

1/3 CUP FRESH CURD - BEATEN

1/2 TSP. SUGAR

SALT TO TEST

* FOR A SMOOTH PASTE :

2 TBSP. COCONUT -GRATED

31/2 TBSP. GARLIC - CHOPPED

2.1/2 TBSP. POPPY SEEDS (KHUKHUS) SOAKED IN 3 TBSP. WARM WATER

2 TBSP. CASHEW NUTS - CHOPPED

1 TBSP GINGER PEST                                               YOU CAN SERVE WITH FRY PANEER.

 6-7 CHILLIES CHOPPED    

1/3 CUP WATER

HEAT THE OIL OR GHEE IN A THICK BOTTOMED.
ADD THE PREPARED PASTE ( FROM GIVEN INGREDIENTS FOR SMOOTH PASTE ).
SAUTE IT ON MEDIUM FLAME FOR 3-4 MINUTES.
ADD THE BEATEN CURD, MIX WELL.
COOK IT 30 SECONDS ON ON A SLOW FLAME.
STIRRING CONTINUOUSLY.
ADD THE SPINACH PUREE,
MIX WELL.
ADD SUGAR AND SALT MIX WELL.
SIMMER FOR 2 - 3 MINUTES, STIRRING AND THEN REMOVE FROM FLAME.
WOW.... DELICIOUS SPINACH GRAVE IS READY TO SERVE PANEER COFTAS.
USE AS A BASE FOR GRAVY.
IT CAN BE USED WITH A LOTS OF VARIETY OF VEG.TO MAKE SUBZI.
