ROLL OUT 1 PORTION OF THE PASTRY TO ABOUT 4 MM. THICKNESS TO COVER BASE OF THE PIE DISH.
GREASE A PIE DISH OF ABOUT 16 CM IN DIAMETER AND KEEP ASIDE.
LAY THIS ROUND OF PASTRY EVENLY ON THE PIE DISH.
PRESS DOWN LIGHTLY TAKING CARE NOT TO PULL OR STRETCH.
PRICK WITH FORK.
FILL THE PASTRY BASE WITH THE APPLE MIXTURE.
ROLL THE SECOND PIECE OF PASTRY IN TO A ROUND TO FIT ON TOP OF THE PIE.
DAMPEN THE EDGES OF THE BASE CRUST WITH COLD WATER AND LAY THE SECOND ROUND OF PASTRY IN POSITION PRESSING IT LIGHTLY TO THE PASTRY RIM.
TRIM THE EDGES.
GLAZE THE PIE COVER WITH A SLIGHTLY MILK.
SPRINKLE CASTOR SUGAR ON IT.
MAKE 2-3 SLICES ACROSS THE TOP OT DO DECORATION.
PLACE THE PIE-DISH IN THE DRIP TRY (BAKING TRAY).
BAKE THE PIE AT 200*C FOR 50 MINUTES OR TILL DONE.
SERVE HOT.
TOPPED WITH CREAM OR ICE CREAM.
