HEALTHY SPICY RECIPE : SPICY VEGETABLE RICE.

SPICY VEGETABLE RICE.

1 CUP RICE-BASAMTI RICE

2.1/4 CUP WATER

1/2 CUP CABBAGE - CHOPPED

1/4 CUP CAULIFLOWER - CUTS.

1/4 CUP CARROTS - GRATED

1 POTATO SLICED -FRIED IN GHEE

1 ONION SLICED

2 SPRING ONION - CHOPPED

2 GREEN CHILLY -CHOPPED

1 TOMATO - CHOPPED

2 TB.SP. TOMATO SAUCE

1/4 GARAM MASALA

3 TBSP CHOPPED CORIANDER

1/2 TSP. KASMIRI CHILLY POWDER

1/2 TBS SUGAR

SALT TO TEST

10-12 CASHEW NUTS - FRIED IN GHEE

12-15 RAISINS

*TADKA'S INGREDIENT

2 TB.SP OIL

2 TB.SP.GHEE

1 TSP.CUMIN SEEDS

10-12 CARRY  LEAVES

5-6 LONG

1 STICK CINNAMON

ADD 2.1/2 CUP OF WATER IN PRESSURE COOKER, AND ADD WASHED -SOAKED RICE(15-20 MINUTES) IN IT .
MAKE 4 WHISTLE TO COOK RICE.

HEAT THE OIL AND GHEE MIX IN A PAN.
ADD THE CUMIN SEEDS.WHEN THEY CACKLE, ADD THE  REST OF TADKA'S INGREDIENT.
WHEN THEY CACKLE,ADD THE ONION AND SPRING ONION SAUTE 2 MINUTES.
ADD CAULIFLOWER, CARROT AND CABBAGE,COVER AND COOK OVER A SLOW FLAME FOR 4-5 MINUTES TILL THEY COOKED.
ADD FRIED POTATO,CHILLY,SAUCE, TOMATO,TURMERIC POWDER, KASMIRY CHILLY POWDER ANS SALT TO TEST.
MIX WELL.ADD 2-3 TB.SP WATER TO COOKED AND PERFECT MIXING.
SAUTE MORE 2 MINUTES.
ADD SALT,CASHEW,RAISINS,SUGAR AND garam masala. MIX WELL.

*THEN RICE AND SPICY VEGETABLE MIX VERY CARE FULLY.

*YES, READY TO SERVE SPICY VEGETABLE RICE.
GARNISH WITH CORIANDER LEAVES.
SERVE WITH PUNJABI CURD.
