WINTER SPECIAL AND COMBINATION FOR BAJARI'S ROTALA AND VARALIYU(VEGETABLE SOUP).
VERY DELICIOUS CHUTNEY.
: GARLIC - FRESH RED CHILIES CHUTNEY :
1 KG. FRESH RED CHILIES-CHOPPED
200 GRAMS GREEN GARLIC - CHOPPED WITH GREENS AND WHITES
300 GRAMS JAGGERY- GRATED (GUR)
100 GRAMS GINGER - CHOPPED
3 NOS. LEMON - (JUICE)
SALT AS REQUIRE
200 GRAMS CORIANDER-CHOPPED

DRAIN THE SOAKED CHILIES AND HALF- CHOPPED THEM.
PUT ASIDE THEM.
GRAND THE GARLIC,GINGER,GRATED JAGGERY (GUR) AND SALT TO A FINE PASTE IN A BLENDER TO MAKE A GARLIC MIX.
DRAIN THE SOAKED CORIANDER AND HALF-CHOPPED THEM.
TAKE HALF-CHOPPED CHILIES AND PUT THEM MUSLIN CLOTH.
DRAIN THE CHILIES JUICE BY PRESSING THEM.
COMBINE THE HALF-CHOPPED CHILIES AND GRINDED GARLIC MIX IN A BIG BOWL.
MIX WELL CHUTNEY FOR PROPER CONSISTENCY.
ADD CORIANDER AND LEMON JUICE.
MIX WELL TO MAKE BRIGHT CHUTNEY..!!!
*REFRIGERATE IN AN AIR-TIGHT CONTAINER AND USE AS REQUIRED.
