1 CUP MUNG DAL

1/4 TSP. TURMERIC POWDER

1/2 TSP. MUSTARD SEED

1/2 TSP. CUMIN SEEDS

1/4 TSP. HING ( ASAFOETIDA )

1/2 TSP. CRUSHED BLACK PEPPER

8-10 CURRY LEAVES

1 TSP. GINGER - GRATED

8 CUPS

1 TBSP. CORIANDER - CHOPPED FOR GARNISH

*

ROAST THE MUNG DAL LIGHTLY IN A DRY P[AN FOR FEW MINUTES.
STIRRING CONTINUOUSLY TILL IT GETS SLIGHTLY DEEPENED IN COLOR.
TAKE PRESSURE COOKER, PUT RICE ,MOONG SAL,TURMERIC POWDER AND WATER WITH PINCH SALT IN IT.
COOK FOR 6-7 WHISTLE .

SEASONING :

HEAT A HEAVY BOTTOMED PAN.
ADD THE MUSTER SEEDS AND CUMIN SEEDS AND STIR UNTIL THEY CRACKLE.
THEN ADD HING POWDER, CRUSHED BLACK PEPPER, CURRY LEAVES AND GRATED GINGER.
TOAST ( BROWN AND CRISPY )THEM FOR A FEW SECONDS.
ADD SALT AND THE SEASONING TO THE COOKED RICE AND MOONG DAL.
MIX WELL
ADD MORE WATER IF REQUIRED.
ALLOW SIMMERING FOR A FEW MINUTES.

SERVE HOT WITH SPICY OR PLAIN CURD.
GARNISH WITH CORIANDER.

2 TSP. CORIANDER LEAVES -FINELY CHOPPED

1 CHILLI -SMALL -CHAPPED

1/2 TBS. LEMON JUICE

SALT AS PER TEST

1`/2 TSP PEPPER POWDER

1/2 TSP. BLACK SALT (SANCHAR POWDER)

7-8 ICE CUBE

CHILLED THE FULL FAT CURD.
ADD SALT, BLACK SALT (SANCHAR POWDER),JEERA (CUMIN) POWDER,CHILLY,LEMON JUICE, MINT LEAVES AND ICE.
MIX WELL, THEN BLEND OR TO CRUSH IN MIXER VERY WELL.
POUR IN BOWL AND ADD ROASTED CUMIN SEEDS, CORIANDER AND WHITE BUTTER.
BLEND SOME MORE.
WHEN CONTENTS ARE A SMOOTH, SNOWY CONSISTENCY, SERVE IN TALL GLASSES.

    1 CUP DRY COCONUT-GRATED

     2.1/2 CUP ROASTED PEANUT POWDER AND ROASTED

    1 CUP SUGAR

    1/2 CUP WATER

    6-8 CARDAMOM POWDER

    1 TSP. DESHI GHEE - FOR THE GREASE TRAY

    1 TSP. DESHI GHEE - FOR POURING OVER

    7-8 PISTACHIOS, SLICED

    ROAST THE COCONUT FOR A MINUTE, WITHOUT GHEE OR OIL.

    *
    PLACE THE SUGAR IN A THICK- BOTTOMED PAN WITH 1/2 CUP OF WATER.
    COOK TILL IT FORMS A SYRUP OF ONE STRING CONSISTENCY.
    ADD THE ROASTED AND GRATED COCONUT, ROASTED PEANUT POWDER AND CARDAMOM POWDER.
    MIX WELL AND REMOVE FROM FLAME.
    AS THE MIXTURE GETS THICKER, ADD THE 1 TBSP. DESHI GHEE OVER THICK MIXTURE.
    STIRRING CONTINUOUSLY.
    TRANSFER THE MIXTURE TO A GREASED TRAY AND LEVEL THE SURFACE.
    GARNISH WITH PISTACHIO'S SLICES AND PRESS SMOOTHLY.
    MARK INTO SQUARE OR DIAMOND SHAPE WITH A SHARP KNIFE WHILE STILL HOT.
    SEPARATE THE PIECES WHEN COLD.
    STORE IN AN AIRTIGHT CONTAINER.
    SERVE AS NECESSARY WITH FARALI CHIVDA AND FARALI POTATO CHIPS.

    ADD THE SUGAR AND MIX WELL.KEEP ASIDE.
    LET TO IT ROOM TEMPERATURE.
    ADD THE MANGO PULP AND LEMON JUICE IN JILETIN MIXTURE.
    MIX WELL .
    POUR THE MIXTURE IN TO A DISPOSABLE GLASSES.
    FILL THE 3/4 PART OF GLASS WITH THE MIXTURE.
    COVER WITH THE BUTTER PAPER.
    PUT IN DEEP FREEZER TO SET.
    REMOVE FROM THE FREEZER AFTER 1 HOUR AND PUT WOODEN STICK IN GLASSES.
    PLACE BACK IN THE DEEP FREEZER TO SET.
    AFTER 7-8 HOURS REMOVE FROM FREEZER.
    SERVE IMMEDIATELY.

    ** આંખોમાં વાયરસ ની ખરાબ અસર થઈ હોય, આંખોમાં બળતરા થતી હોય કે પછી આંખોનો કોઈ ગરમીને કારણે રોગ થયો હોય તો ક્લીન કપડામાં એલો વેરા નો પલ્પ મૂકી આંખ પર તેનો પાટો બાંધવો.

    * એલો વેરા ના જ્યુસ માં દારુ હળદર નો પાવડર મિક્ષ કરી, ગરમ કરી કપાળ પર જે જગ્યાએ પેઈન થતું હોય ત્યાં લગાવવાથી કફ તથા વાયુજન્ય હેડ પેઈન -માથાનો દુખાવો મટી જાય છે.

    * સખત હેડ પેઈન રહેતું હોય કે માથું ગરમ રહેતું હોય તો માથા પર એલો વેરા ના પલ્પ નો પાટો બાંધવો.

    * આંખો નીચે કાળા કુંડાળા થતા હોય તો ત્યાં એલો વેરા ના પલ્પ નો માલીશ કરવી.

    * એલોવેરા ના જ્યુસ માં હળદર અને ફુલાવેલી ફટકડી વાટી આંખોના દુખાવા વાળા પાર્ટ પર લગાવવાથી ફાયદો થાય છે.

    * એલોવેરા ના પલ્પમાં હળદર પાવડર મિક્ષ કરી, ગરમ કરી પગ ના તળિયા પર બાંધવાથી આંખોનો દુખાવો મતે છે.

    એલોવેરા નો પલ્પ 1.1/2 થી 2 ઇંચ જેટલો  લઈ તેની સાથે આંબા હળદર પીસી, કપડા ના પાટા  પર લેપ કરી તેને આંખો પર બાંધવાથી, વાતજ - પીત્તજ આંખોના ગળણ માં ફાયદો થાય છે.  

    * એલો વેરા ના પલ્પ માં ફુલાવેલી ફટકડી મિક્ષ કરી બંધ આંખો પર તેનો પાટો બાંધવાથી આંખોની બળતરા તથા લાલાશ દુર થાય છે.

    OIL FOR FRYING KOFTAS

    TAKE A BOWL AND COMBINE ALL THE INGREDIENTS IN IT.
    MIX WELL.
    DIVIDE THE MIXTURE IN TO 5 EQUAL PORTIONS.
    SHAPE EACH PORTION IN TO A ROUND BALL.
    HEAT OIL IN A FRYING PAN.
    DEEP FRY KOFTAS IN A OIL ON A MEDIUM FLAME.
    FRY KOFTAS GOLDEN BROWN IN COLOR FROM ALL SIDES.
    REMOVE FROM OIL.
    PUT ON ABSORBENT PAPER TO DRAIN THE OIL.
    BASIC PANEER KOFTA IS READY.
    YOU CAN SERVE IT WITH SPINACH GRAVY AND ALSO OTHER SPICY TASTED GRAVY.
    IT IS VERY EASY AND YUMMY WAY, TO EATING KOFTAS AND VARIETY OF GRAVY TOGETHER.

    2 TBSP. COCONUT -GRATED

    31/2 TBSP. GARLIC - CHOPPED

    2.1/2 TBSP. POPPY SEEDS (KHUKHUS) SOAKED IN 3 TBSP. WARM WATER

    2 TBSP. CASHEW NUTS - CHOPPED

    1 TBSP GINGER PEST                                               YOU CAN SERVE WITH FRY PANEER.

     6-7 CHILLIES CHOPPED    

    1/3 CUP WATER

    *
    HEAT THE OIL OR GHEE IN A THICK BOTTOMED.
    ADD THE PREPARED PASTE ( FROM GIVEN INGREDIENTS FOR SMOOTH PASTE ).
    SAUTE IT ON MEDIUM FLAME FOR 3-4 MINUTES.
    ADD THE BEATEN CURD, MIX WELL.
    COOK IT 30 SECONDS ON ON A SLOW FLAME.
    STIRRING CONTINUOUSLY.
    ADD THE SPINACH PUREE,
    MIX WELL.
    ADD SUGAR AND SALT MIX WELL.
    SIMMER FOR 2 - 3 MINUTES, STIRRING AND THEN REMOVE FROM FLAME.
    WOW.... DELICIOUS SPINACH GRAVE IS READY TO SERVE PANEER COFTAS.
    USE AS A BASE FOR GRAVY.
    IT CAN BE USED WITH A LOTS OF VARIETY OF VEG.TO MAKE SUBZI.

    300 ML. FULL FAT MILK

    2 TBSP. MILK POWDER

    150 GRAMS MANGO PULP (HAFUS MANGO - SWEET MANGO )

    2 TBSP. COLD MIlk

    1.1/2 TBSP CORNFLOUR

    3 TBSP. SUGAR

    3 TBSP. MILK CREAM

    *

    MIX THE CORNFLOUR WITH A COLD MILK. KEEP ASIDE.
    HEAT THE 300 ML. FULL FAT MILK ON SLOW FLAME.
    BRING TO BOIL.
    ADD SUGAR AND CONTINUE TO BOIL.STIR WELL.
    THAN ADD THE CORNFLOUR +MILK MIXTURE IN IT. MIX WELL AND STIR CONTINUOUSLY ON SLOW FLAME TO PREVENT LUMPS FROM FORMING.
    BOIL TO THICK CONSISTENCY.
    THEN BRING TO ROOM TEMPERATURE.
    TAKE MANGO PULP AND ADD MILK POWDER IN IT. MIX WELL.
    ADD MANGO PULP MIXTURE IN COLD ( ROOM TEMPERATURE COLD )  MILK MIXTURE.
    BLEND WELL FOR SMOOTH TEXTURE.
    POUR THE MIXTURE INTO A OTHER CONTAINER. COVER WITH THE LID AND PLACE IN A FREEZER TO SET FOE 2 HOURS.
    REMOVE FROM THE FREEZER AFTER 2 HOURS.
    BLEND THE MIXTURE TO MAKE SMOOTH.
    THEN POUR IN KULFI MOULD.
    COVER WITH THE LID AND PLACE BACK IN THE DEEP FREEZER TO SET FOR 7-8 HOURS.
    SERVE IMMEDIATELY DELICIOUS, MOUTH WATERING MANGO KULFI.

     * ALOE VERA ના રસ માં 1 થી 1.1/2 ચમચી લીંબુ નો રસ મેળવીને વાળ માં લગાવવો.1/2 કલાક પછી વાળ  ધોઈ લેવા। ખોડો  દુર થશે.

    *તેના થી તાળવા માં ઠંડક થાય છે આ મિશ્રણ માં શેમ્પુ પણ ઉમેરી શકાય છે.વાળ સુવાળા પણ બનશે.

    * અલોવેરા ના પલ્પ ને માથા માં બરાબર ઘસી ને લગાવી માથા માં બરાબર લેપ કરવો.ત્યારબાદ પાણી થી માથું ધોઈ લેવું. બરછટ વાળ અતિ ચમકદાર, કાળા અને સુવાળા બનશે. તથા ઝડપ થી વૃદ્ધિ પામશે, વાળ ખરતા અટકશે.

    *વાળ માં એલોવેરા ના પલ્પ ની માલીશ કરવા થી તેનો રસ તીવ્ર ઝડપ થી સ્કીન માં ઊંડે સુધી ઉતરે છે અને વાળના મૂળ ને મજબુત બનાવે છે અને સુરક્ષા આપે છે.

    * એલોવેરા ના શેમ્પુ થી નિયમિત  માથુ ધોવાથી આછા બ્રાઉન કલર ના નબળા વાળ ને નવી જીવન શક્તિ મળે છે તથા એનો કાયા કલ્પ  થઇ જાય છે.

    * અલોવેરા ના પલ્પ નો  મિક્સર માં રસ કાઢી,તેમાં તેટલા જ પ્રમાણ માં આમળા નો રસ મિક્સ કરી તેમાં 100 ગ્રામ તલ નું તેલ અથવા કોપરેલ તેલ ઉમેરી ઉકાળવું.પાણી બળી જાય અને તેલ બાકી રહે એટલે ઉતારીને ઠંડું પાડવું। આ તેલ વાળ માટે ઉત્તમ છે.

    *શિકાકાઈ નો અર્ક અને અલોવેરા નો પલ્પ મિક્સ કરી શેમ્પુ બનાવો. તે વાપરવા થી વાળ ને પોષણ મળે છે.વાળ સુવાળા, અને શાઈની બનશે.


    * અલોવેરા રસ 1 સ્પુન અને શેમ્પુ 2 સ્પુન ની માત્રા  માં લઇ વાળ માં સારી રીતે લગાવી પાણી થી સારી રીતે ધોઈ લો. વાળ સુવાળા અને ચમકદાર અને માથાની સ્કીન એકદમ ક્લીન થશે.

    HEAT GHEE ON MEDIUM HEAT.
    ADD ONION AND CAPSICUM AND FRY FOR 2 MINUTES.

    KEEP ASIDE.

    1/2 TBSP. LEMON JUICE.

    1/4 CUP BROWN SUGAR

    1/4 CUP SUGAR

    2 TBSP. CORN STARCH

    1/2 TSP CINNAMON POWDER

    PINCH NUTMEG

    PINCH SALT

    1 CUP WATER

    MIX WELL APPLE AND LEMON JUICE.
    ADD SUGAR, CORNSTARCH, CINNAMON POWDER, NUTMEG AND SALT IN A SAUCE PAN.
    STIR IN WATER.
    BRING MIXTURE TO A BOIL.
    STIRRING CONSTANTLY FOR 2 MINUTES AND BOIL.
    ADD THE APPLES SLICES OR CHOPPED APPLES.
    BRING TO A BOIL AGAIN.

    ADD COLD WATER T O THE FLOUR-FAT MIXTURE LITTLE AT A TIME MIXING WITH A FORK OR KNIFE,ADDING JUST ENOUGH WATER TO MAKE THE PASTRY BIND TOGETHER.
    FINISH THE MIXING WITH FINGERTIPS AND PRESS THE DOUGH LIGHTLY INTO A BOLL.

    WRAP THE DOUGH IN A WET CLOTH. CHILL IN THE REFRIGERATOR FOR 1 HOUR.

    1. માથાની  ત્વચા  પર અલોવેરા નો પલ્પ અથવા રસ રોજ લગાવવાથી ત્વચા તંદુરસ્ત, સુવાળી તથા ચમકતી બને છે.

    2. તાલ  પર વાળ પણ ઉગી જવાની સમભાવના છે.

    3. માથા માં ખોડો, લીખ, સોરાયસીસ, ગરમી, ખંજવાળ, જીણી ફોડકીઓ વગેરે તકલીફ હોય તો અલોવેરા ના પલ્પ માં લીમડા ના પાન વતી ને ક લીમડા નો રસ મેળવી ને વાળ માં -ત્વચા પર  લેપ કરવો. 

    બે કલાક પછી વાળ માથું ધોઈ નાખવા,ત્વચા સ્વચ્છ અને રોગ રહિત બનશે. વાળ લીસા, સુવાળા તથા સુંદર બનશે. 

    4. અલોવેરા વાળ માટે શ્રેષ્ઠ કન્ડીશનર છે. 
     વાળ સુકા, ઝાંખા પડી ગયેલા અને બરછટ  હોય તો અલોવેરા નો  
      પલ્પ વાળ ના મૂળ માં તથા વાળ પર લગાવવો.
    1/2 કલાક પછી વાળ માથું બરાબર ધોઈ લેવા.
    વાળ સુવાળ બનશે અને ખરતા અટકશે.

    5. શેમ્પુ નો ઉપયોગ કર્યા પછી કન્ડીશનર તરીક અલોવેરા નો પલ્પ ઉત્તમ છે. 
    વાળ ભીના હોય ત્યારે તેલ ની જેમ વાળ ના મૂળ સુધી મસાજ કરવું.
    વાળ ચમકતા, સુવાળા, લીસા તથા મજબુત બનશે.

    6. 10 મિલી ગ્રામ અલોવેરા પલ્પ લેવો, સીતાફળ ના 4 બીજ લેવા. બીજ નું બારીક ચૂર્ણ કરી પલ્પ સાથે બરાબર મેળવવું, માથામાં જ્યાં ખોડો હોય ત્યાં સહેજ ઘસીને લગાવવું.
    આખી રાત રહેવા દેવું. સવારે હુફાળા પાણી થી માથું ધોઈ નાખવું. 
    2-4 વખત ના આ ઉપચાર થી ખોડા ની તકલીફ દુર થઇ જશે.

    GREASE AND DUST 18 cms. SQUARE TIN ( MOULD ) AND KEEP ASIDE.
    MIX WATER AND VANILLA ESSENCE AND KEEP ASIDE.
    MIX CONDENSED MILK AND BUTTER, BEATING CONTINUOUSLY IN ONE DIRECTION.
    ADD 1 TBSP. OF THE SIEVED FLOUR MIXTURE IN TO THE BEATEN MIXTURE.

    MIX 1/2 TSP. SALT, 1 GREEN CHILL CHOPPED, 1 TSP. CHOPPED PARSLEY, 1/4 TSP PEEPER POWDER AND 1 CHOPPED ONION TOGETHER.

    1 CUP BAKED BEANS IN TOMATO SAUCE

    2 DICED TOMATOES WITHOUT THE PULP

    1 LARGE GREEN CAPSICUM DICED 

    SHREDDED CABBAGE

    FEW LETTUCE LEAVES

    1/4 CUP SHREDDED MEXICAN CHEESE FOR THE TOPPING

    SERVE :

    PUT THE PANEER MIXTURE IN THE TACOS, ADD THE BAKED BEANS, SHREDDED MEXICAN CHEESE, TOMATOES, CAPSICUM AND LETTUCE. 
    TOP WITH SHREDDED MEXICAN CHEESE AND CHILL I SAUCE.

    HEALTHY SWEET RECIPE : SAFFRON KULFI


    HEALTHY SWEET RECIPE :  SAFFRON KULFI 





    5 CUPS MILK

    1 TIN MILKMAID

    2 LEVEL TBSP.  CORN FLOUR

    2 TBSP. CHOPPED ALMONDS OR PISTACHIOS

    1/2 TSP. GROUND CARDAMOM

    10- 12 NOS. SAFFRON - TO FLAVOR

    *
    MIX TOGETHER MILK AND MILK MAID .
    BRING TO BOIL TO STIRRING CONSTANTLY.
    MAKE A PASTE OF CORNFLOUR WITH 2 TBSP WATER AND ADD TO THE BOILING MIXTURE; CONTINUE BOILING FOR 2-3 MINUTES, TILL THICK.
    REMOVE FROM FIRE AND ADD FLAVORING, CARDAMOM POWDER AND CHOPPED NUTS, COOL.
    FILL IN THE KULFI MOULDS AND LEAVE TI SET IN A FREEZER FOR 6 - 8 HRS. OR OVER NIGHT.
    THEN REMOVE FROM THE MOULDS AND SPRINKLE MORE CHOPPED ALMONDS AND
    SERVE.

    HEALTHY SPICY RECIPE : SPINACH BHAKHAI


    HEALTHY SPICY RECIPE : SPINACH BHAKHARI 

    1/2 CUP SPINACH + CORIANDER PULP (MIXED)

    2 CUP WHEAT FLOUR

    1/2 CUP GRAM FLOUR

    2 TBSP. GHEE

    SALT AS PER TEST

    1/2 TSP. CUMIN SEEDS

    2 TBSP. GHEE FOR GREASING COOKED BHAKHARI


    *
    COMBINE WHEAT FLOUR AND GRAM FLOUR IN A BOWL.
    ADD DESHI GHEE,SALT,CUMIN SEEDS, BLACK PEPPER POWDER AND MIX WELL.
    THEN ADD SPINACH PULP AND MIX WELL.
    THEN KNEAD INTO A TIGHT DOUGH WITH ENOUGH WATER (or milk )
    DIVIDE THE DOUGH INTO  4  EQUAL PORTIONS.
    ROLL OUT EACH PORTIONS INTO CIRCLE.
    HEAT A NONSTICK TAVI.
    COOK ON LAW FLAME ON BOTH SIDES TILL GOLDEN BROWN WITHOUT USING OIL OR GHEE.
    GREASING SPINACH BHAKHARI WITH DESHI GHEE.
    SERVE HOT WITH CHILLY AND CARROT PICKLE  AND WITH CURD.

    250 G. RIPE TOMATO

    50 G. CUCUMBER

    50 G. GREEN PEPPER

    50 G. RED PEPPER

    SALT IN TEST
    15 ML. OLIVE OIL

    2 G. GARLIC

    2 G. PEPPER POWDER

    *
    FOR GARNISH : 

    60 G. LETTUCE

    20 G. GREEN PEPPER

    30 G. CUCUMBER

    *
    BLEND ALL THE INGREDIENTS TOGETHER UNTIL SMOOTH.
    ADJUST SEASONING.
    POUR IN TO A BOWL.
    *
    TO ASSEMBLE :

    CUT THE PEPPERS AND CUCUMBER INTO THIN STRIPS AND PLACE IN THE CENTER OF THE BOWL, ALONG WITH SOME BUNCHED OF LETTUCE.
    SERVE COLD.

    YOU CAN SERVE WITH CROUTONS AND PANEER ALSO.

    BLEND UNTIL SMOOTH.
    TRANSFER TO KULFI MOULDS.
    ADD A STICK TO EACH MOULD.
    CHILL OVER NIGHT BEFORE SERVING.

    HEALTHY SWEET RECIPE : ORANGE JUICE CANDY - VERY EASY TO MAKE.





    1/2 CUP SUGAR

    1/2 CUP ORANGE POWDER

    1/2 CUP WATER

    3 CUP SODA WATER (SODA DRINK)

    TAKE BIG BOWL.MIX SUGAR, ORANGE POWDER, WATER AND SODA WATER TOGETHER.
    POUR THE MIXTURE IN TO A METAL ICE CREAM CONTAINER TO HALF LEVEL.
    COVER WITH THE LID AND PLACE IN THE FREEZER 6-7 HOURS TO SET.
    *
    IF YOU WANT TO MAKE TWO TEST OF CANDY,FIRST -AT THE BOTTOM FILL WITH ICE CREME.
    THEN POUR OVER YOUR FAVORITE JUICE.
    REMOVE FROM THE FREEZER AND CONTAINER AFTER 6-7 HOURS.
    SERVE THE DOUBLE  TESTY DELICIOUS CANDY.

    1 કી દહી

    100 ગ્રામ ખજુર

    100 ગ્રામ બુરું ખાંડ

    1/2 વાટકી દૂ

    6-7 એલચી નો પાવડર

    2 ટે. સ્પુ. ચારોલી

    ખજુર ના ઠળિયા કાઢી તેના નાના પીસ કરો.
    દૂધ માં તેને 2-3 કલાક પલાળી રાખો.
    નરમ થઇ જાય એટલે બ્લેન્ડર માં સ્મુધ થાય તેવું પીસો.
    ચાળણી થી ચાળી રેસા કાઢી નાખો.

    દહી ને કપડા માં બાંધી ઓવર નાઈટ લટકાવી રાખો.
    સવારે પાણી નીતરી જાય એટલે દહી નો મસ્કો મોટા બાઉલ માં કાઢી લો.
    મસ્કા માં ખજુર નો માવો , બુરું ખાંડ, એલચી પાવડર અને ચારોલી નાખી બરાબર હલાવી શિખંડ બનાવો.
    સર્વિંગ બાઉલ માં પીરસી તેના પર એલચી પાવડર અને ચારોળી થી ગર્નીશ કરો.
