HEALTHY SPICY RECIPE : FARALI UTTAPA




2 CUPS SAMO - SOAKED

1/2 CUP FARALI ATTA

1/2 CUP RAJAGARA ATTA

1.1/2 CUP CURD

1 TBSP. GINGER CHILLY - PASTE

1/4 CUP CUCUMBER - GRATED

1/2 CUP TOMATO - CHOPPED

1 TBSP CORIANDER - CHOPPED

1 TSP. COCONUTS - GRATED

SALT AS PER TEST

1/2 TSP.  FRUIT SALT

* FOR TADKA

2 TBSP OIL

2-3 NOS. GREEN CHILLYS CHOPPED

10-12 CURRY LEAVES

1/2 TBSP CUMIN SEEDS

MAKING BATTER :

MIX WELL SAMO,FARALI ATTA AND RAJAGARA ATTA IN BIG BOWL.
ADD CURD,GINGER CHILLY PASTE, SALT AND MAKE SOFT BATTER.
WHISK TILL IT IS A SMOOTH BATTER.
GIVE REST FOR 15 MINUTES.
THEN ADD CUCUMBER, CHOPPED CORIANDER AND GRATED COCONUT IN IT.
MIX WELL.

HEAT THE OIL IN A NON STICK PAN.
ADD THE CUMIN SEEDS. WHEN THEY CRACKLE, ADD THE CHOPPED CHILLY AND CURRY LEAVES.
SAUTE IT .THEN REMOVE FROM FLAME.
ADD TADKA IN ATTA BATTER AND MIX WELL.
ADD THE FRUIT SALT, MIX WELL.

UTTAPA :
HEAT THE NONSTICK PAN AND GREASE IT LIGHTLY WITH OIL.
SPREAD A LAYER OF THE BATTER TO FORM A UTTAPA.
COOK ON BOTH SIDES TILL GOLDEN BROWN, USING A LITTLE OIL.
REPEAT WITH THE REMAINING BATTER TO MAKE MORE UTTAPA.
SERVE HOT WITH CORIANDER-MINT CHUTNEY.
