1/2 BEET ROOT

4 NOS. BIG TOMATOES - CHOPPED

1 CARROT - CHOPPED

1 CAPSICUM - CHOPPED

1 ONION - CHOPPED

2 CINNAMON LEAVES (TEJPTTA)

3 CLOVES (LONG )

2 PIECE CINNAMON

1.1/2 TSP. SUGAR

1/2 TSP. DESI GHEE

SALT AS PER TEST

BLACK PEPPER AS PER TEST

HEAT THE GHEE INA PAN .ADD TEJPTTA, CLOVES AND  CINNAMON.
WHEN THEY CRACKLES, ADD THE CHOPPED ONION.
SAUTE TILL THE ONIONS TURN TRANSLUCENT.
THEN ADD CHOPPED CARROT , CHOPPED TOMATOES AND CHOPPED CAPSICUM.
SAUTE FOR 4-5 MINUTES.
THEN REMOVE THE TEJPTTA FROM VEGETABLES.
ADD ALL THESE VEGETABLES IN GRINDER JAR, GRIND TO A SMOOTH PASTE.
ADD 5-6 GLASSES WATER IN IT TO MAKE THIN LIQUID.
ADD BLACK PEPPER POWDER, SALT AND SUGAR.
THEN BOIL THE DRINKS FOR 5 MINUTES.
THEN STRAIN THE LIQUID.
SERVE HOT BEETROOT - TOMATO DRINK.

2.1/4 CUP STRAWBERRY -SLICED

3 CUP SPINACH -CHOPPED

3 TBSP. ALMOND - SLICED

FOR DRESSING :

2 TBSP. SEASME SEEDS

1 TSP. POPPY SEEDS (KHASKHAS)
4 TBSP. SUGAR

2.1/2 TBSP. OLIVE OIL

3 TSP. VINEGAR

1/2 TSP. WHITE PEPPER POWDER

1/2 TSP. RED CHILLY FLAKES

1/2 TSP. VEGETARIAN SOUSE

1 TBSP. ONION - CHOPPED

COMBINE ALL THE DRESSING'S INGREDIENTS IN A BOWL.
MIX WELL.
THEN REFRIGERATE FOR ONE HOUR TO SET.
ARRANGE THE STRAWBERRY SLICES,ALMOND SLICES AND CHOPPED SPINACH IN A SEVERING BOWL.
POUR THE DRESSING ON IT AND MIX WELL, BEFORE SERVE.

PINCH ASAFOETIDA ( HING)

1 TSP. GINGER - GRATED

SALT  AS PER TEST

OIL TO FRY

SOAK THE MUNG DAL IN SOME HOT WATER FOR 3-4 HOURS.

THEN DRAIN WATER AND GRIND.
KEEP ASIDE.
NOW HEAT THE OIL IN A NON STICK PAN.
ADD THE HING, CHOPPED GINGER, CHOPPED CHILLY S, CHOPPED ONIONS. MIX WELL.
SAUTE THE ONIONS TILL THEY ARE TRANSLUCENT.
THEN ADD PANE ER AND SAUTE FOR 2 MINUTES.ADD CHOPPED CORIANDER
MIX WELL.
THEN ADD THE GRINDED MUNG DAL MIXTURE.
SEASON WITH SALT IN MIXTURE INA BOWL,WITH ENOUGH WATER FOR SMOOTH BATTER.
POUR A SPOONFUL OF THE BATTER ON THE PAN TO MAKE 50 MM. DIAMETER PANCAKE.
COOKING ON BOTH SIDES WITH A LITTLE BUTTER OR OIL TILL GOLDEN BROWN.
REPEAT WITH THE REAMING BATTER TO MAKE MORE PANCAKES
SERVE HOT WITH CURD OR HONEY OR JUICE.

1 CUP CASHEW NUTS - DRY ROASTED

3 TBSP. PLAIN WATER

2 TBS. ROSE WATER

3/4 CUP SUGAR

1/4 CUP DESHI GHEE-MELTED

1/4 TSP. CARDAMOM POWDER

6-8 STRANDS SAFFRON

MAKE A COARSE POWDER OF CASHEW IN THE MIXER.
HEAT THE NON STICK PAN OVER LOW HEAT.
ADD ROSE WATER, PLAIN WATER AND SUGAR.
MAKE A SYRUP OF ONE STRING CONSISTENCY.
THEN ADD CARDAMOM POWDER, SAFFRON, CASHEW POWDER AND DESHI GHEE.
REMOVE FROM HEAT.
SET ASIDE TO ALLOW THE MIXTURE TO COOL SLIGHTLY.
SHAPE IN TO SMALL BALLS.
COAT IT WITH GRATED CHOCOLATE.
PUT IN THE REFRIGERATOR FOR FIVE MINUTES.
SERVE AS DESSERT.

TAKE THE MOTHER DAIRY CHACH  IN BIG BOWL.
ADD THE GROUNDNUT POWDER, SALT, SUGAR, TOMATO, LEMON JUICE,  DHANIYA POWDER AND GARAM MASALA.
BLEND IT TOGETHER WITH BLENDER.
HEAT THE DESHI GHEE IN A PAN.
ADD THE CLOVES,CINNAMON AND STAR ANISE
WHEN IT CRACKLES ADD THE CUMIN SEEDS IN IT.
THEN THEY CRACKLES ADD CHOPPED CHILLI, CURRY LEAVES AND RED CHILLI S POWDER.
ADD THE MOTHER DAIRY CHACH MIXTURE IN PAN.
 MIX WELL AND BRING TO A BOIL.
HEAT TILL GROUND NUT POWDER AND OTHER INGREDIENT GET TO COOKED.
BOILS 3-4 MINUTES.
GARNISH WITH CHOPPED CORIANDER LEAVES.
SERVE HOT WITH FARALI KHICHADI, FARALI POTATO VEG.

RED PART:

HEAT THE OIL IN A PAN ADD THE CUMIN SEEDS AND MUSTARD SEEDS.
WHEN THE SEEDS CRACKLE, ADD THE CINNAMON, LEAVE AND LONG.
THEN ADD RED CHILLY POWDER, FINE CHOPPED ONION.
ADD FINE CHOPPED TOMATOES, SALT, SUGAR.
SATUE 5-7 MINUTES.
THEN COVER AND COOK OVER A SLOW FLAME .
MAKE THICK CONSISTENCY.
MIX IN IT PINCH GARAM MASALA.
KEEP IT ASIDE.

NOW GREEN:

200 G. GREEN PEAS- FINE CRUSHED

2 TSP. GARLIC GREENS -FINE CHOPPED

2 TBSP. CORIANDER-FINE CHOPPED

2 GREEN CHILLY S-CHOPPED

2 TBSP. OIL FOR TADKA

PINCH CUMIN SEEDS

SALT AS PER TEST.

1 TSP. SUGAR

1/2 TSP. LEMON JUICE

GREEN PART :

MIX THE GREEN PEAS, GARLIC GREENS, CORIANDER AND GREEN CHILLY S.
GRIND IT IN GRINDER WITHOUT WATER.
HEAT THE OIL IN A PAN.
ADD CUMIN SEEDS.
WHEN THE CUMIN SEEDS CRACKLE , ADD ADD PEAS MIXTURE.
ADD SUGAR AND SALT.
SAUTE FOR 5-7 MINUTES.
STIRRING CONTINUOUSLY.
COVER AND COOK OVER A SLOW FLAME TILL IT COOK.

WHITE PART OF RICE :

1 CUP BASMATI RICE - SOAKED FOR 15 MINUTES

PINCH SALT

1 TBSP. DESHI GHEE

2.3/4 CUP WATER TO COOK

PLACE THE WATER IN COOKER.
ADD THE RICE.
ADD GHEE AND SALT, MIX WELL.
LID AND MAKES FOR WHISTLE.

NOW ARRANGE :

TAKE ONE BOWL AND GREASE WITH GHEE TO ALL OVER .
TAKE RED PART OF TOMATO. PUT  1/3 PART IN THE BOWL AT ONE SIDE.
THEN IN SECOND-ONE THIRD PART OF BOWL FILL WITH THE RICE.
THEN REMAINING PART OF THE BOWL FILL WITH GREEN PEAS MIXTURE
THEN TAKE ONE PLATE. PUT IT ON THE BOWL.
THEN REVERSE IT. TAKE OFF THE  BOWL.
PUT ONE  BADIAN ON RICE PART. TO MAKE CHAKRA.

SERVE TRIRANGA RICE WITH TOMATO SOUP.

1 TBSP. CASTER SUGAR

40 G. WHOLEMEAL FLOUR

25 G. WALNUT - CHOPPED

2 TSP.SESAME SEEDS

65 G.BROWN SUGAR

65 G. BUTTER WITHOUT SALT

PREHEAT THE OVEN TO 180*C.
PUT THE PLUMS IN A PAN.
GREAT THE ZEST FROM ONE OF THE ORANGES. ADD TO THE PAN.
ADD THE JUICE BOTH ORANGES AND ADD TO THE PAN.
THEN ADD CASTER SUGAR AND BADIAN STAR.
MIX WELL BRING TO A BOIL.
THEN SIMMER FOR FIVE MINUTES.
POUR PLUMS AND JUICES IN FOUR MOLDS.
PLACE THE OTHER REMAINING INGREDIENTS IN A GRINDER.
GRIND IT TILL THEY LIKE BREAD CRUMBLES.
SPRINKLE THE CRUMBLE OVER THE MOLDS.
PUT ON A BAKING SHEET.
THEN BAKE IN THE OVEN FOR 20 TO 25 MINUTES UNTIL BUBBLING.

150 G CARROTS - PEELED AND GRATED

3 TBSP. WALNUT PIECES-TOASTED

350 G. FLOUR

150 G. WHOLE MEAL FLOUR

1 TSP. SALT

2 TSP SODA BICARB.

300 ML. YOGURT

125 ML. SKIMMED MILK

HEAT THE OVEN TO 230*C.
MIX THE FLOURS SALT AND SODA BICARB.
THEN STIR IN THE CARROT, WALNUTS AND YOGURT.
FOLLOWED BY ENOUGH OF THE MILK TO MAKE SOFT AND STICKY DOUGH.
DUSTING ON TO SURFACE.
TAKE A LITTLE DOUGH AND FORM A FLAT BALL.
REPEAT TO MAKE OTHER NINE MORE BALLS.
PUT ON A BAKING SHEET.
SLASH THE TOP.
BAKE FOR 30 MINUTES UNTIL RISEN AND COOKED.
WHEN READY, THEY WILL SOUND HOLLOW WHEN YOU TAP THEM.

20 GRAMS CORIANDER - CHOPPED

HEAT THE OVEN TO 200* C.
STEAM THE CARROTS FOR 10 MINUTES AND THEN HALVE THEM LENGTHWISE.
TOSS THE CARROTS, CUMIN SEEDS,CHILLY FLAKES,GARLIC SALT AND PEPPER WITH A SLUG OF OIL.
HALF THE ORANGE JUICE IN A ROASTING TIN.
ROAST FOR 30 MINUTES  OR UNTIL IT GOLDEN.
DOT WITH SOFT CHEESE. THEN SPRINKLE WITH THE REST OF THE ORANGE JUICE AND THE CORIANDER LEAVES.

MIX BUCKWHEAT, CARROTS, ONIONS AND PARSLEY. ADD TAHINI AND CHECK SEASONING.
TRY BRINGING THE MIXTURE TOGETHER TO FORM OF TIKKI.
IF IT DOESN'T HOLD TOGETHER, SPRINKLE IN SOME OAT FLAKES AND MIX WELL BEFORE SHAPING.
HEAT ENOUGH SESAME OIL TO COAT THE BOTTOM OF THE FRYING PAN.
ROLL TIKKIES IN FLOUR.
FRY UNTIL GOLDEN BROWN.
SERVE TIKKIES BETWEEN WHOLEWHEAT BUNS, WITH SALAD AND SAUCES WITCH YOU WANT.

1 CUP MEDIUM BULGUR - DALIYA

2 CUPS WATER

1.1/2 CUPS COOKED CHICKPEAS

2 CUCUMBERS - CHOPPED

SALT TO TEST

3 TOMATOES -CHOPPED

2 SPRING ONIONS -CHOPPED FINE

1 CUP MINT LEAVES -CHOPPED FINE

80 ML. EXTRA VIRGIN OLIVE OIL

80 ML. LEMON JUICE.

BRING THE WATER  TO A BOIL, AND ADD BULGUR AND SALT.
 STIR, COVER AND COOK FOR 15 MINUTES, UNTIL ALL  THE WATER IS ABSORBED.
TURN IN TO A MIXING BOWL AND COOL COMPLETELY.
MIX IN TOMATOES, SPRING  ONIONS AND CHOPPED HERBS.
DRIZZLE OVER WITH OLIVE OIL AND LEMON JUICE, AND MIX GENTLY. CHECK SEASONING AND SERVE AT ROOM TEMPERATURE OR CHILLED.

4 FLAKES GARLIC -FINE CHOPPED

2 CUPS COOKED CHICKPEAS

SOME SPRING OF PARSLEY OR CORIANDER LEAVES-CHOPPED FINE

HERB SALT, TO TEST

1 TSP CUMIN POWDER

1/2 TSP TURMERIC POWDER

PINCH OF CURRY POWDER

BLEND THE CHICKPEAS, ONIONS AND GARLIC TOGETHER.
MAKE FINE PEST.
ADD PARSLEY, HERB SALT AND SPICES.
MIX WELL.
CHECK SEASONING.
DIVIDE THE MIXTURE AND SHAPE IN TO BURGERS OR CROQUETTES.
PRESSING THE MIXTURE FIRMLY TOGETHER.
ARRANGE ON A GREASED BAKING TRY.
BAKED AT 170*C FOR 20 TO 25 MINUTES UNTIL THEY TURN GOLDEN AND A LITTLE SCRIP ON THE OUTSIDE.
SERVE HOT WITH A CREAMY AVOCADO DIP.

10 BROWN RICE BISCUITS-CRUMBLED

10 DRIED APRICOTS-SLICED FINE

1/4 CUP ROASTED SUNFLOWER SEEDS

1/4 CUP PEANUT BUTTER

1/4 CUP MALT SYRUP (made from either sprouted or malted barley)

A PINCH OF SALT

PUT A PAN ON MEDIUM HEAT
PUT IN PEANUT BUTTER, MALT SYRUP AND A PINCH OF SALT IN  IT.
ONCE THE MIXTURE IS HOT, ADD SUNFLOWER SEEDS AND APRICOTS, AND MIX WELL.
ADD RICE CRACKERS AND MIX.
THE MIXTURE SHOULD BE A LITTLE WET AND STICKY.
IF IT IS TOO DRY, ADD A LITTLE MORE MELT SYRUP TO HELP BIND THE INGREDIENTS.
IF IT IS TOO WET, ADD SOME MORE RICE CRACKERS. REMOVE FROM HEAT.
ALLOW TO COOL.
PUT SPOON OF MIXTURE IN TO MUFFIN MOLDS, PRESSING IT IN FIRMLY.
REFRIGERATE FOR 30 MINUTES.

 કોર્ન ઢોકળા :

1 કપ રવો

1કપ મકાઈ -દાણા:અધકચરા ક્રશ કરેલા

2 ટેબલ સ્પુ. બેસન

2 ટે સ્પુ. ચોખાનો લોટ

પીંચ હિંગ

1 ટે સ્પુ. આદુ-લસણ પેસ્ટ

2 ટે સ્પુ. મરચા ની પેસ્ટ

1.1/2 કપ ખાટી છાશ

1 ટી. સ્પુ ઈનો ફ્રુટ સોલ્ટ

1 સ્પુ તેલ

મીઠું જરૂર મુજબ

રીત :

સૌ પ્રથમ એક મોટા બાઉલ માં રવો, ક્રશ કરેલા મકાઈ ના દાણા, ચણા નો  લોટ અને ચોખાનો લોટ લઈ મિક્ષ કરો.
તેમાં હિંગ, મીઠું ,આદુ-લસણ પેસ્ટ, મરચા પેસ્ટ બરાબર મિક્ષ કરો.
ત્યારબાદ તેમાં ખાટી છાશ ઉમેરી  મિક્ષ કરી બરાબર હલાવી ખીરું  બનાવો.
30 મિનીટ ખીરા ને રેસ્ટ આપો
ખીરા માં 1 ટી. સ્પુ. ઈનો ફ્રુટ સોલ્ટ અને 1 ટે. સ્પુ. તેલ ઉમેરી બરાબર મિક્ષ કરો.
તરત જ ગરમ  ઢોકલીયા માં થાળી મુકવી.

*ઢોકાલીયા માં પાણી ગરમ મુકો.
ઢોકળાની થાળી માં તેલ લગાવી તેમાં 3/4 ઇંચ જેટલું ખીરું પાથરો
ગરમ ઢોકલિયા માં થાળી મૂકી, 10-12 મિનીટ  પકાવો.
થાળી ઢોક્લીયામાંથી બહાર કાઢી જરા વરાળ નીકળે એટલે સ્ક્વેર કાપી લો.
તેના પર લાલ ચટણી ભભરાવો.

*તેલ તથા ફુદીના ચટણી સાથે ગરમ - ગરમ સર્વ કરો.
*ઢોકળા વાઘરી ને પણ સર્વ કરો.
